Koroneiki Variety
Sphera Extra Virgin Olive Oil is a single variety produced from the legendary Koroneiki tree. These trees have survived since ancient times, producing one of the world’s highest quality olive oil. The variety originated in Crete over 5000 years ago. The particular taste, aroma, and rich composition of Koroneiki olive oil are unique and distinctive. They produce glowing golden-green oil, which is highly acclaimed for its fruity aroma, and rich peppery taste. The koroneiki olive has a very high content of oleic acid and polyphenols, making the oil very stable with excellent health benefits. The “Olive Magazine” named the Cretan Koroneiki variety, “one of the best in the world.”
Taste Characteristics: The taste is fruity with hints of dried herbs followed by a slight chicory or radicchio bitterness and a peppery or ‘radish heat’ and a slight nuttiness at the finish. In addition to its rich flavour and vivid colour, the oil from this highly prized variety also boasts low free fatty acids (less than 0.3%) and long shelf life due to its high level of polyphenols.
